Choco Chip Banana Cake with Brown Butter Icing
While we try to eat healthy, there are always a few bananas that don't make the cut.
So, what do you do? Make Banana Cake!
This recipe has been an all-time favorite for years and passed down from my sweet college roommate. I only made a few tiny alterations...
everything's better with chocolate and brown butter icing.

- I N G R E D I E N T S -
Set Oven 350 - Bake time 55 mins.

CAKE
- 2 c. granulated sugar
- 1/2 c. vegetable oil
- 1 c. milk
- 2 eggs
- 1 1/2 t. vanilla
- 3 c. flour
- 1 t. baking soda
- 2 t. baking powder
- dash of cinnamon
- 3 ripe bananas (mashed)
- 1 c. semi-sweet chocolate chip
Directions:
-Grease & flour pans (or use non-stick cooking spray)
-Mix flour, baking soda, baking powder, and cinnamon in bowl
-In separate bowl, mix oil and sugar, add eggs and vanilla
-Gradually add dry ingredients into wet ingredients, alternating dry mix and milk
-Once smooth, add smashed bananas
-Fold in chocolate chips
-Bake at 350 degrees for 55 mins. or until toothpick comes out clean
-Remove and cool on rack
-Once completely cooled, add icing (recipe below)

BROWN BUTTER ICING
- 3 T. butter
- 1 1/2 c. confectioners sugar
- 1 t. vanilla
- 1 T. milk
-In sauce pan, brown butter delicately over medium heat - stirring continuously.
-Mix brown butter into confectioners sugar
-Add vanilla
-Add milk (you can add more gradually to your desired thickness - be careful, a little goes a long way)
